eat for health Peppered Pork Tenderloin Mini Sandwiches
(makes 8 mini sandwiches)

  • 1 pound pork tenderloins
  • 2 tsp olive oil
  • 2 tsp lemon pepper seasoning
  • 8 dinner rolls, split
  • 2 Tbsp mustard


  1. Preheat oven to 425 degrees.
  2. Brush pork tenderloin with olive oil.
  3. Rub lemon pepper over entire surface of pork tenderloin.
  4. Place on rack in roasting pan. Bake 25 minutes or until meat thermometer registers 160 degrees.
  5. Let meat rest 5 minutes.
  6. Carve into thin slices.
  7. Spread rolls with mustard.
  8. Fill with meat.
This recipe is great for leftover pork from a previous meal.
