Peppered Pork Tenderloin Mini Sandwiches
(makes 8 mini sandwiches)

- 1 pound pork tenderloins
- 2 tsp olive oil
- 2 tsp lemon pepper seasoning
- 8 dinner rolls, split
- 2 Tbsp mustard
Directions:
- Preheat oven to 425 degrees.
- Brush pork tenderloin with olive oil.
- Rub lemon pepper over entire surface of pork tenderloin.
- Place on rack in roasting pan. Bake 25 minutes or until meat thermometer registers 160 degrees.
- Let meat rest 5 minutes.
- Carve into thin slices.
- Spread rolls with mustard.
- Fill with meat.
This recipe is great for leftover pork from a previous meal.
