Grilled Vegetables (Serves
4)

- 2 tablespoons olive or canola oil
- 2 tablespoons chopped parsley
- 1⁄2 cup diced red pepper
- 1 sweet onion, sliced, 1⁄2 inch rounds
- 2 small yellow squash, sliced in 1⁄2 inch rounds
- 3 zucchini, sliced in 1⁄2 inch rounds
- 2 cloves of garlic, minced
Directions:
1. Place red pepper, zucchini, squash, and onion on a sheet pan and
brush with olive oil.
2. On a preheated grill or grill pan, cook vegetables until golden brown
(about 3 to 4 minutes).
3. Place cooked vegetables on and serve.
