  • 2 tablespoons olive or canola oil
  • 2 tablespoons chopped parsley
  • 1⁄2 cup diced red pepper
  • 1 sweet onion, sliced, 1⁄2 inch rounds
  • 2 small yellow squash, sliced in 1⁄2 inch rounds
  • 3 zucchini, sliced in 1⁄2 inch rounds
  • 2 cloves of garlic, minced

Directions:
1. Place red pepper, zucchini, squash, and onion on a sheet pan and brush with olive oil.
2. On a preheated grill or grill pan, cook vegetables until golden brown (about 3 to 4 minutes).
3. Place cooked vegetables on and serve.
